I could lie and say I only make these beauties because the peanut butter/chocolate combination is my husband’s favorite and he loves when I make them, which is reason alone to have them be a favorite, but the truth of the matter is that they are A.M.A.Z.I.N.G! Truly, they are what you need on a “forget any diet” or “Bachelor finale” or “I forgot I signed up to take a dessert to the church party” kind of night. And they are a cookie bar- which is another victory because you have less time in the kitchen taking a million batches of cookies in and out of the oven. Win win win! FYI, they are fabulous without the peanut butter cups on top the frosting as well. Sometimes you just need to eat those during the baking process. No judgment here and no one will know the difference:) Enjoy!
Peanut Butter Cup Cookie Bars
1 1/2 c. butter (3 cubes)
1/2 c. white sugar
1 c. brown sugar
Cream well, then add:
1 egg
2 tsp. vanilla
Beat, then add:
Heaping 1/2 c. peanut butter (I just feel better about it being in a half cup after the 3 cubes of butter:)
Cream together, then add:
1 1/2 c. flour
3/4 tsp. soda
1/2 tsp. salt
Stir together, then add:
2 c. oatmeal (old fashioned or quick, either way turns out great~)
Grease jelly roll pan – regular large sized cookie sheet with edges- and press PB mixture around evenly.
Bake @ 325 15-18 minutes. Don’t overcook.
Cool and frost with Easy Chocolate Frosting. Chop peanut butter cup candies and sprinkle over freshly spread frosting.
Enough to share or just hide with the pan:) BTW… this is one of my favorite ways to eat oatmeal.
